1.  Introduction

Gum tragacanth is a natural gum obtained from the dried sap of several Middle Eastern legumes of the genus Astragalus. Yarrow gum is a viscous, odorless, tasteless, water-soluble polysaccharide mixture obtained from the drained and dried sap of the plant roots. Chewing gum exudes from the plant in twisted ribbons or flakes and can be made into powder form. It absorbs water into a gel and can be stirred into a paste. The main part is known as xanthophyll, a highly water-soluble mucilaginous gel, and the chemically related balsalin, which is much less soluble but swells in water to form a gel. This gum is used as an edging and polishing compound in vegetable tanned leather processing, and occasionally as a reinforcing agent in textiles.

3.1. Incense making

Gum tragacanthis also used in incense making as a binder to bind all the powdered herbs together. Its water solubility is ideal for easy handling and even application, and it is one of the stronger gums used to keep particles in suspension. Compared to gum Arabic or something similar, only half as much is needed.

3.2.Condiments, mayonnaise and dressings

Gum tragacanth modified starch is the thickener of choice today. New products are constantly being introduced to the market, some of which are added to sauces with chewing gum. For example, tartare sauce, smoked barbecue sauce and horseradish sauce contain xanthan gum, which thickens the sauce and is stable under the acidic conditions found in these products. Condiments and sauces are important product groups where acid stability and long shelf life are important. Vinegar is usually the main ingredient, while yarrow gum can be used as a spice stabilizer and aqueous phase thickener for ingredients such as spice flavorings and natural flavor extracts.

3.3.Pharmaceutical products

Gum tragacanth is an effective suspending agent for many pharmaceutical products. It typically suspends active ingredients by increasing the viscosity of the outer phase, thereby preventing the undissolved material from settling. In practice, yarrow gum is used as a suspending agent in aqueous mixtures containing resinous tinctures and heavily insoluble powders. Glycerol of yarrow gum is a useful excipient to bind tablets.Gum tragacanth mucilage is used in topical lotions. Yarrow gum is also used in higher concentrations as a base for jelly lubricants.

4.1.Industrial application: used as thickener, emulsifier, suspending agent, water-holding agent, film-forming agent.

4.2.Pharmaceutical ----- is used as emulsification stabilizer for cod liver oil, orange juice cod liver oil, mineral oil, fat-soluble vitamins, etc. Pharmaceutical adhesion agent; suspension stabilizer for insoluble particles; suspension stabilizer ( dosage: 0.2%). Cosmetics ---- oil-water stabilization system for advanced cosmetics, such as hair milk, facial lotion, etc. (0.4-0.8%)

4.3.Food ---- emulsion stabilizer for acidic oil-water system, such as: French and Russian salad dressing; and other kinds of seasoning sauce, sweet and sour sauce, etc.
