Which is better chitin or chitosan?

Chitin and chitosan are both derived from the natural polymer chitin, which is found in the exoskeletons of crustaceans, such as shrimp, crabs, and lobsters, as well as in the cell walls of fungi. While they share similarities, there are distinct differences between chitin and chitosan in terms of their properties and applications.
