The composition and properties of silk protein
The protein content of silk as high as 98%, is composed of two kinds of silk fibroin and sericin protein, silk fibroin accounted for 70% ~ 80%, 20% ~ 30% of sericin protein by a H chain and a chain through the combination of the S-S L. Silk fibroin and sericin contain 18 kinds of amino acids, including essential amino acids. The main components of silk are glycine, alanine, tyrosine and serine. Sericin contains a large amount of serine, aspartic acid and glutamic acid, followed by glycine, threonine and lysine. Hydrophilic amino acids in sericin are more hydrophobic than those of hydrophobic amino acids, while hydrophilic amino acids in silk are less than hydrophobic amino acids. Silk protein contains not more than 0.7% potassium, calcium, silicon, strontium, phosphorus, iron and copper and other inorganic elements.
From the point of view of industrial materials, silk protein has the following outstanding properties as compared with other natural biopolymer
1. The material is simple, and the content of protein is more than 95%. Pure silk protein can be obtained from silk
2. It is easy to change its structure by heating, drying, compressing, chemical treatment, etc. it can make fibers, powder, film, solution and so on.
3. The silk protein is insoluble in alcohol solution, contribute to the silk fibroin biomaterials and the characteristics, because this solvent on living tissue harmless.
