Some products may say 100% lemon powder on the packaging, but others may list lemon essence, maltodextrin, citric acid, etc. in the ingredients list. What's the source of the taste difference?

 

Classification of fruit powder according to production process

 

Spray-drying fruit powder: After squeezing the juice, 180°C hot air whizzes away the moisture. The entire process takes less than half a minute, resulting in minimal aroma loss and a beautiful color.

 

Freeze-drying fruit powder: The lemon pulp is first frozen into ice, then placed in a vacuum chamber to allow the moisture to sublime, essentially freezing the fruit into cotton. This method is expensive, but it still contains the vitamin C and peel oil.

Drum-drying fruit powder: The fruit pulp is spread on hot drums and slowly roasted, resulting in a brownish color and diminished aroma. Its advantage is its low price, and it's often used in low-end solid beverages.

Lemon Powder vs. Flavored Powder

Three things to keep in mind:

Citric acid is high, so don't take more than 5g of it on an empty stomach, otherwise it will cause stomach acid.

Flavor powder contains high doses of flavors and sweeteners, so pregnant women and children should avoid it.

Drum-dried powder browns due to high temperatures and has a slightly higher acrylamide content, so long-term, large-scale consumption is not recommended.
